I doubled the mix this morning and it fed 2 adults and 2 children with only 1 pancake to spare. (The only reason I did not eat it is because we are traveling this afternoon and I wanted a quick healthy snack for the kids in the car!)
The mix seemed a little runny in the bowl, but the pancakes fluffed up nicely on the skillet.
As I was adding the mix to the skillet, the kitchen filled with smells of sweet, cinnamony, pancakes!
I was surprised to find my husband gobbled down his first plate and asked for seconds before I had even sat down! My husband is a great eater, but generally cringes when I tell him there is a secret or a substituted ingredient. He is the kind of guy that can eat an entire loaf of bread and never see any side effects! So adding healthy ingredients generally isn't his favorite, at least when I tell him before he takes his first bite! So when I told him these pancakes were healthy, AND he asked for seconds, I knew they were good!!
Even our daughter, who can top out at a full hour to finish a meal no matter what it is, had her big "A" pancake completely eaten in 15 minutes flat! She did add peanut butter to her pancakes, but peanut butter or not, I was thrilled at how quickly she ate her nutritious food with zero complaints.
And, of course, our little man was two fisting them into his mouth.
This boy loves all carbs! He is a meat and potato boy, so I loved that these pancakes had added benefits that I would normally have to fight to just keep it in his mouth!
Then there is me. I love pancakes, actually I really like syrup! But I generally stay clear of pancakes or sweet carbs because I have next-to-no self-control once I start eating them!
Usually I feel so bloated and gross eating lots of pancakes, but today was a different story.
These Paka Pancake Mix protein pancakes are very similar to my homemade ones, but have added nutrient benefits! They are sweet, fluffy, and delicious! The sweetness is different than buttermilk but still yummy-in-my-tummy, all the same. And the texture is perfect. I have tried MANY (too many, to be honest) forms of "healthy" pancakes or protein pancakes, but the textures were always funky or they came out very bland.
I had my Paka pancakes this morning with pure maple syrup and turkey breakfast sausage. The combination of flavor and texture like a firecracker exploding in my mouth, in a good way ;) !!!
The Paka Pancake Mix protein pancakes were perfect for our son’s first birthday and a hit for our morning!!! I will definitely be making these again soon :)
